EDUCATIONAL LIBRARY SERVICES RECOMMENDED RESOURCES FOR CSEC FOOD & NUTRITION

These recommended free e-resources are specifically aligned with the Caribbean Secondary Education Certificate (CSEC) curriculum framework as suggested in the CSEC Food and Nutrition Syllabus. Resources are provided under each of the following three general topics of study as recommended by CXC:

 

Principles of Nutrition

Food Service Management

Food Preparation and Service

 

This syllabus generally aims to:

  • Develop knowledge, skills and attitudes that will enable students to pursue post-secondary studies, future careers and work associated with food, nutrition
  • Develop an understanding of the skills required for nurturing the growth of individuals and families and manage family life for successful living
  • Develop foundational competencies for the effective management of the interrelationships among nutritional needs, healthy lifestyle practices and the environment
  • Create an awareness of the value of indigenous resources of the region to aesthetics, science and technology competencies in the improvement of social and economic well-being;
  • Provide opportunities for the development of behaviours for active involvement in the health and well-being of the home, community and workplace
  • Equip students with critical thinking, design, analytical and problem solving skills through authentic learning experiences.

Students pursuing this syllabus will develop competencies in an appropriate mix of knowledge, skills and abilities. The syllabus is geared towards helping learners matriculate to higher learning, sustain lifelong learning, integrate readily and attain employment in industry in a wide variety of careers in Family Support Services, Health Sector Food and Hospitality industries.

 

NOTE: On conclusion of the course of study, the student will be provided with opportunities for and skills in the planning, preparation and presentation of foods. Additionally, the understanding of the nature of food and the principles of nutrition that are also attained, are useful for maintaining the general health and wellbeing of individuals and their families generally.
